Listen I’m not going to write some long paragraph talking about who knows what just so you have to scroll way down to the bottom of the page to get to the recipe. Do people even read blogs anymore? I’m just here for the food.

With that said here is a mini paragraph talking about my soup.

I have been making this soup for over a year now, slowly perfecting it and I think I have done just that. Also if you make it and you don’t like it, I don’t have anything to say except I LOVE IT.

Crock Pot Curry Chicken Soup

Ingredients:

  • 2-3 chicken breast

  • 1 can of chickpeas (drained & rinsed)

  • 1/3 cup of dried red lentils

  • 1 can coconut milk

  • 1 - 5.5oz can of tomato paste

  • 3 sliced bell peppers

  • 1 TBS Curry powder

  • 1 TBS Turmeric

  • 1 TBS onion powder

  • Salt & Pepper to taste

  • 2 TBS Curry Paste

  • 1 TBS coconut aminos

  • 4 cups of chicken broth

  • 1 Lime

  • Cilantro

DIRECTIONS:

  1. Chop bell peppers, I cut them into thin strips

  2. Place all ingredients in the crock pot

  3. Cook on high for 4 hours or until chicken is fully cooked

  4. Once chicken is cooked, remove from the crock pot and shred with a fork

  5. Return chicken to crock pot

  6. Add chopped cilantro and lime to your bowl

  7. Eat your delicious soup
